I love blueberry everything. Muffins. Pancakes. Donuts. I don't discriminate.
Normally, I opt for a bulletproof coffee & a protein shake in the mornings, but sometimes you just need something warm & hearty. That's where oatmeal comes in.
I used to eat my version of 'Proatmeal' years ago when I had a six pack (seriously). I would mix a scoop of Cinnamon Swirl flavored protein powder from Cellucor with a half cup of oats and water. Mind blowing. Girls at work would even ask me to bring it in for them too!
We'll pretend this is the fancier, less processed version of that.
HEALTHY BLUEBERRY OATMEAL BAKE
3 cups of Old Fashioned Oats
1 cup of Blueberries (fresh or frozen)
2 Egg Whites
1 cup of Unsweetened Almond Milk (or Cashew)
1/2 cup of Homemade Unsweetened Applesauce**
2 tablespoons of Honey, Agave, or Pure Maple Syrup
2 teaspoons of Baking Powder
2 teaspoons of Cinnamon
Pinch of Salt
**My version of homemade applesauce is cooked unsweetened apples in a food processor. You can also use store bought unsweetened organic applesauce.
Preheat oven to 350°F. Spray an 11×7 or a 9×13 pan with nonstick cooking spray.
Whisk eggs, applesauce, and sweetener of choice until smooth. Stir in cinnamon, salt, and baking powder. Stir in oats and milk. Gently fold in blueberries. Spread in prepared pan.
Bake for 28-34 minutes until oatmeal is browned and not jiggly in the center. Cool slightly before serving.
Store in refrigerator up to 2 days. You can also portion and freeze for quick
